A team of researchers from Queen's University discovered the reason why garlic is so good for our health. "We did not understand how garlic is able to contain such an effective antioxidant, since it does not contain a significant amount of compounds that are usually responsible for high antioxidant activity in plants, such as flavonoids (flavanoids) found in green tea or grapes," explains chemistry professor Derek Pratt, who led the study. "If indeed allicin is the substance responsible for this activity in garlic, we wanted to know how it works."

The research team examined the substance's effective ability to trap harmful radicals, and considered the possibility that it is actually a breakdown product of allicin that is truly responsible for this activity. Through experiments with synthetic allicin, they found that acid, obtained by rapid decomposition of the substance, is the one that reacts with the radicals. Their findings were published in the January issue of the scientific journal Angewandte Chemie.

"Basically, the allicin compound needs to break down in order for the effective antioxidant to be formed," explains the researcher. "The reaction between the sulfenic acid (sulfenic acid) and the radicals is extremely fast and limited only by the time required for the two compounds to combine with each other. No one has ever observed compounds, natural or neutral, that react so quickly as antioxidants."

The researchers are sure that there is a connection between the activity of the sulfonic acid and the health benefits of garlic. "Although garlic has long been used as a medicinal plant for many generations and there are many supplements of it on the market, to date no convincing explanation has been found as to why garlic is so good for health," says the chief researcher. "I think we have taken the first step in uncovering the basic chemical mechanism that could explain the health benefits of garlic."

Garlic, along with onions, leeks and shallots, is part of the Alliaceae family. All of these other vegetables contain a compound very similar to allicin, but do not have the same medicinal properties. The researchers believe that this is due to a lower rate of breakdown of the allicin-like compound in these vegetables, which results in a lower concentration of the sulfonic acid available to react with the radicals as antioxidants.
