Good news for coffee addicts: scientists are developing decaffeinated coffee with the texture, aroma and taste of regular coffee. The research team, from the "Nera" Institute in Japan, genetically engineered for the first time coffee seeds that contain 70% less caffeine than usual, without harming the taste.

However, according to the publication in the magazine "Popular Science", the time involved in the process of preparing the genetically engineered coffee may slightly cloud its taste. The genetically engineered coffee bushes germinate seeds only after four years from the moment they are planted, after which several more years will pass before the seeds "ripen" in the laboratories.

Hiroshi Sano, from the research team, believes that the long time will be worth the wait. According to him, "the engineered coffee will be much tastier than the familiar decaffeinated coffee, which loses its flavor and aroma during the preparation process." It turns out that during the normal process in which the caffeine is squeezed out of the coffee, some key flavor components are "lost" along with it. To overcome the problem, the scientists were able to isolate the enzyme that causes the plant to produce the caffeine, and remove it.

And what about the development of coffee with more caffeine? As strange as it sounds, the Japanese scientists claim that no one has yet presented the idea to them.

The scientist adds: in the process of separating the caffeine from the coffee beans, carbon dioxide is used at high pressure - in a state of aggregation known as supercritical fluid. While the coffee producers could get rid of this complicated process, a scientist working with NASA suggests that the process could be used to produce water, oxygen and fuel for a flight back from Mars.
